Together we put together a list where you can order every wine by the glass or by the bottle. And thanks to the Coravin, we also pour special bottles by the glass without having to open them.

ChardonnayItaly, Piemonte
From the Castino family estate, where wine has been made for generations. This Chardonnay is fresh and easy-drinking, with aromas of stone fruit and flowers. No heavy oak, just a fine, elegant wine.
Pinot GrisGermany, Pfalz
Pinot Gris, or Grauburgunder as it's called in Germany. Elegant and refined, with aromas of tropical fruit, pear and citrus. The soft finish with a light freshness keeps it beautifully balanced.
RiojaSpain, Rioja
An autumn and winter white with ripe yellow fruit and a refined touch of oak. Aged in French oak barrels, it is soft and lightly creamy, with a long, silky finish.
ViognierFrance, Cévennes
Viognier is a grape that instantly makes you happy. This wine is full of ripe pear and stone fruit, with a full structure and a lovely touch of oak. A deliciously rich style of Viognier.

Bedoba WhiteGeorgia, Kakheti
White wine from Georgia is well worth discovering too. This special blend has aromas of ripe pear, baked apple, honey and roasted almonds. Creamy and spicy, with plenty of freshness and an exciting structure. Not your everyday glass of wine!
BourgogneFrance, Bourgogne
A lovely introduction to white Burgundy. Ripe apple, citrus and a subtle touch of oak, with the soft, round structure that makes Chardonnay so popular. Elegant, refined and wonderfully food-friendly.

This Nebbiolo from the Castino family estate is full of flowers and red fruit, with a fresh hint of mint. Elegant and refined, but certainly not difficult.
SolenneItaly, Puglia
Puglia in your glass! Ripe black cherries, plums and blackberries, with a touch of vanilla and chocolate. Warm and smooth, yet thanks to the fresh finish never too heavy.
Casa Santos LimaPortugal, Alentejo
A full, powerful wine with ripe red fruit, dark berries and spicy notes of black pepper and dried herbs. Round and warm on the palate.

Georgia has a long history of winemaking, yet we rarely drink its wines. This one might just change that. A wonderfully generous and rich glass of wine. Ripe blackcurrant, herbs and plenty of intensity.

Intense RipassoItaly, Valpolicella
OrganicGiovanni Ederle makes his wines high in the hills above Verona. This organic Ripasso is very intense, full of ripe cherries, blackberries and herbs, with notes of tobacco, clove and liquorice.
Classic RiojaSpain, Rioja
A Gran Reserva is given all the time it needs to develop, and you can taste it. Ripe fruit, spices, cocoa and a lovely touch of oak. Full and complex, with soft tannins and a long finish. Rioja as Rioja is meant to be.
Rosé

About our wine
Can you order wine by the glass at Taverne Paulus?
Yes. We serve every wine on our list by the glass and by the bottle, including the special bottles from our Coravin selection.
What is the Coravin?
With the Coravin we pour wine through a thin needle in the cork, without opening the bottle. The rest of the bottle stays perfect, so we can offer wines by the glass that you would normally only order by the bottle.
Who chooses the wines?
We put our wine list together with Jaap from Wijnkoperij van Lieverlee, here in Hilvarenbeek.
Can I come in just for a glass of wine?
Of course. Take a seat at the bar or at a table, you’re welcome for just a drink too. We also have finger food to share.
Which wine goes with my dish?
Just ask us, we’re happy to help. For every wine you can see whether it is light or full-bodied. Lighter wines often go well with fish and salads, fuller wines with meat from the grill.
